Lemon Balm Lemonade

In this recipe were using Lemon Balm, which I'm totally overrun with right now in the greenhouse! I love this bright, herbaceous periannual for it's antiviral nature and calming effect on the nervous system. It's also super easy here to grow in pots- I highly recommend having it fresh, on hand- it is SO good!

 

For this recipe you will need....

  • About a handful of fresh lemon balm leaves, or 4 cups of chilled lemon balm tea made with 4 Tb dried leaves to 4 cups water. You can also use my Calming tea, for an extra boost of nervine supportive botanicals like Oatstraw, Chamomile and Lavender.

  • 3 lemons, squeezed

  • 3 tbsp. Raw honey

  • Dash of sea salt

 

To make a really lovely lemonade, I like to squeeze my lemons right into my pitcher or jar and then throw the peel right in, too. In a motor and pestle, muddle the Lemon Balm leaves. Sprinkle them into the jar and drizzle with raw honey all on top. Pour over with fresh water. (if you're using lemon balm tea than use this instead).
